Shantawene Washed
Join Grace as she brews our Ethiopia Shantawene Washed on a Hario V60 dripper. This delicious Landrace varietal is floral and fruity and really shines as a pour over.
Sourcing & Processing
The Shantawene village is situated between the village of Bombe and the base of the Bombe mountain in the Sidama Region of southern Ethiopia. Coffee plants (both wild and cultivated) flourish in these fertile highlands. Rich in water resources, Sidama is the leading coffee producing region of Ethiopia.
This landrace coffee was grown on approximately 500 small farms located near the Shantawene village and processed at the nearby Abore washing station. The station gets its name from the Abore bridge and fountain, both dedicated to a local chief. The Bok Nora Waterfall is also close by and the whole area is bursting with lush vegetation.
Ripe cherries are hand-picked and delivered to the washing station to be sorted. The selected cherries are de pulped (their skin and fruit are removed) then fermented in tanks of clean water for 36 to 72 hours. This loosens the mucilage and allows any remaining fruit to be easily removed in the final rinse. The coffee is washed a final time in clean water and moved to raised beds to dry in the sun. It takes approximately 9 to 12 days to dry to the ideal moisture level (around 10%). During high sun, the beds are covered to prevent over drying.
